Crispy Garlic Parmesan Fries

Deliciously crispy fries infused with garlic and topped with freshly grated Parmesan, perfect for any occasion.

Ingredients

  • 2 large Russet potatoes
  • Peanut oil or canola oil or vegetable oil (for frying)
  • 3 cloves fresh minced garlic
  • ½ cup freshly grated Parmesan cheese
  • Fine sea salt or kosher salt (to taste)
  • Freshly cracked black pepper (to taste)
  • Fresh parsley or chives (optional, for garnish)
  • Garlic powder (optional)
  • Onion powder (optional)

Instructions

  1. Prepare the Potatoes: Peel the Russet potatoes and cut them into even matchsticks, about ¼-inch thick. Transfer them to a large bowl of cold water to rinse off excess starch and soak for at least 30 minutes.
  2. Drain and Dry: After soaking, drain the potatoes thoroughly and spread them out on a clean kitchen towel or paper towels. Pat them completely dry to prevent moisture from causing splatter.
  3. Blanch the Fries: Heat the frying oil in a large pot or Dutch oven to about 300°F (150°C). Fry the potatoes in batches for 5-7 minutes until pale and cooked through. Remove them with a slotted spoon and place on a wire rack to drain and cool.
  4. Chill the Fries: Allow the blanched fries to cool completely, even placing them in the fridge for 20-30 minutes to ensure maximum crispiness later.
  5. Fry to Perfection: Increase the oil temperature to 375°F (190°C). Return the blanched fries to the oil in batches and fry for another 3-5 minutes until golden brown and crispy.
  6. Drain the Excess Oil: Remove the crispy fries from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  7. Combine Flavors: In a large bowl, add the hot fries, freshly minced garlic, grated Parmesan cheese, salt, and black pepper. Toss gently to coat every fry with the garlic-Parmesan mixture. Add fresh herbs if using.
  8. Serve and Enjoy: Serve immediately while hot, and enjoy the scrumptious flavor explosion.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 2 days. Reheat in the oven for best results.
