  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • Fresh parsley for garnish

Instructions

  1. Cook the rice according to the package instructions.
  2. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  3. Heat vegetable oil in a large frying pan over medium-high heat.
  4. Fry the seasoned chicken breasts until golden brown, about 6-7 minutes per side.
  5. Rest the chicken for a few minutes before slicing.
  6. Sauté the minced garlic, chopped onion, and bell pepper until softened, about 3-5 minutes. Add the corn and cook for another 2 minutes.
  7. Assemble the bowls by serving rice topped with sautéed vegetables and sliced chicken. Garnish with fresh parsley.
