A healthier twist on classic fish and chips, featuring crispy Parmesan-coated cod cooked in an air fryer for a delightful crunch.

Ingredients

  • 2 cod fillets (about 6 ounces each)
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 large egg
  • 1 tablespoon olive oil

Instructions

  1. Pat the cod dry with paper towels.
  2. Combine the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper in a mixing bowl.
  3. Whisk the egg until slightly frothy.
  4. Dip each cod fillet into the egg mixture, letting excess drip off, then coat with the breadcrumb mixture.
  5. Preheat the air fryer to 400°F (200°C).
  6. Spray the air fryer basket with cooking spray.
  7. Carefully place the cod fillets in the air fryer basket and cook for 10-12 minutes, flipping halfway through.
  8. Let the cod rest for a couple of minutes before serving.

Notes

For added flavor, consider adding different spices or herbs to the breadcrumb mixture. You can also experiment with different types of fish.
