Indulge in this classic French dessert featuring a rich custard base topped with a crispy caramel layer.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (for topping)
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Simmer the heavy cream and vanilla bean seeds in a saucepan over medium heat until just simmering.
  3. Whisk together the egg yolks, granulated sugar, and salt until well combined.
  4. Tempering the eggs, gradually pour hot cream into the egg mixture while whisking continuously.
  5. Strain the mixture through a fine-mesh sieve into another bowl.
  6. Divide the custard into ramekins and arrange them in a baking dish, filling it halfway with hot water.
  7. Bake for about 30-40 minutes, until the custard is set but jiggles slightly in the center.
  8. Cool to room temperature, then refrigerate for at least 2 hours or overnight.
  9. Caramelize the sugar on top of each custard using a kitchen torch until golden brown.
  10. Serve and enjoy with fresh berries or whipped cream.

Notes

Use a kitchen torch for best results when caramelizing the sugar. Can be made ahead of time and stored in the fridge for up to 3 days.
