A silky-smooth cheesecake topped with a satisfying layer of caramelized sugar, combining the best of crème brûlée and cheesecake.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup sugar (for caramelizing)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs with the melted butter until it resembles wet sand.
  3. Press this mixture evenly into the bottom of a springform pan.
  4. Beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Add the eggs, one at a time, blending until thoroughly combined.
  6. Pour the heavy cream into the mixture, gently mixing until combined.
  7. Pour the cheesecake batter over the prepared crust in the springform pan.
  8. Bake in the preheated oven for about 55-60 minutes.
  9. Let the cheesecake cool completely at room temperature.
  10. Refrigerate for at least 4 hours or preferably overnight.
  11. Sprinkle a thin layer of sugar over the top of the cheesecake before serving.
  12. Caramelize the sugar with a kitchen torch until golden brown.

Notes

Ensure cream cheese is at room temperature before mixing for a smooth texture. You can make this cheesecake ahead of time for better flavor development.
