A rich and creamy cheesecake topped with a crunchy caramelized sugar layer, blending the best of two beloved desserts.

Ingredients

  • 2 cups of crushed graham crackers
  • 1/2 cup of unsalted butter, melted
  • 2 cups of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs
  • 1 cup of heavy cream
  • 1/4 cup of sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the crushed graham crackers with melted butter in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan as a crust.
  4. Beat the cream cheese and granulated sugar together until smooth.
  5. Add the vanilla extract and mix until incorporated.
  6. Incorporate the eggs, one at a time, blending well after each.
  7. Mix in the heavy cream until fully combined.
  8. Pour the mixture over the crust and smooth the top.
  9. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  10. Cool at room temperature, then refrigerate for at least 4 hours.
  11. Caramelize the top by sprinkling sugar and using a kitchen torch until golden.

Notes

Store leftovers in the refrigerator for up to 5 days or freeze for up to 2 months. Ensure cream cheese is at room temperature to avoid lumps.
