  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the Chicken: Begin by generously seasoning the chicken breast with salt, black pepper, and Italian seasoning on both sides.
  2. Heat the Skillet: In a large skillet, heat the olive oil and butter over medium heat.
  3. Cook the Chicken: Add the seasoned chicken to the skillet and cook for approximately 5 to 7 minutes on each side.
  4. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute.
  5. Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2 minutes.
  6. Deglaze with Chicken Broth: Gently pour in the chicken broth to deglaze the pan.
  7. Create the Creamy Sauce: Add the heavy cream and bring the mixture to a gentle simmer.
  8. Add the Parmesan Cheese: Stir in the grated Parmesan cheese until fully melted.
  9. Incorporate the Spinach: Fold in the baby spinach and red pepper flakes.
  10. Return the Chicken and Add Tortellini: Return the sliced chicken to the skillet and add the cheese tortellini.
  11. Garnish and Serve: Finally, garnish with the chopped fresh parsley and serve immediately.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat gently, adding a splash of cream or broth if needed.
