A comforting dish featuring tender chicken in a creamy sauce with sun-dried tomatoes and fresh spinach.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, drained and chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
  3. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  4. Stir in the sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Bring the mixture to a simmer.
  5. Add the fresh spinach and let it wilt into the sauce.
  6. Return the chicken to the skillet, making sure to coat it in the creamy sauce.
  7. Simmer for an additional 5 minutes, allowing the chicken to soak up all the flavors. Adjust seasoning as needed.
  8. Serve hot, garnished with a generous sprinkle of grated Parmesan cheese.

Notes

For extra flavor, marinate the chicken before cooking. Serve with pasta or bread to enjoy the sauce.
