A comforting creamy pasta dish with rigatoni enveloped in a tomato cream sauce, featuring savory Italian sausage and fresh spinach.

Ingredients

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage and cook until browned, about 5-7 minutes.
  3. Sauté the garlic for 1 minute until fragrant.
  4. Stir in the diced tomatoes (with their juice) and bring to a simmer.
  5. Combine the heavy cream, Parmesan cheese, salt, and pepper; stir well.
  6. Cook the rigatoni according to package instructions until al dente. Drain and add to the skillet.
  7. Toss in the fresh spinach and cook until wilting, about 2 minutes.
  8. Serve hot, garnished with additional Parmesan if desired.

Notes

For variation, add sautéed mushrooms or extra vegetables. Can substitute ground turkey for the sausage for a lighter dish.
