A delightful curry featuring halloumi cheese and tomatoes, combined with spices in a creamy coconut sauce. Perfect for busy weeknights!

Ingredients

  • 200g halloumi cheese, diced
  • 400g canned tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 200ml coconut milk
  • Salt and pepper to taste
  • Fresh coriander for garnish
  • Rice or naan for serving

Instructions

  1. Heat some oil in a large pan over medium heat and sauté the chopped onion until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional minute.
  3. Stir in the curry powder, cumin, and paprika; cook for a minute until fragrant.
  4. Add the diced halloumi and canned tomatoes to the pan, then pour in the coconut milk.
  5. Season with salt and pepper, and let the mixture simmer for 10-15 minutes until the halloumi is cooked through and the sauce is thickened.
  6. Serve hot over rice or with naan, garnished with fresh coriander.

Notes

For extra flavor, pan-fry the halloumi separately until golden before adding it to the curry. Add chili flakes for heat, and consider including spinach or bell peppers for extra nutrition.
