  • 1 cup (240ml) Milk (any kind)
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • Zest of 1 small Lemon
  • 2 tablespoons (28g) Unsalted Butter

Instructions

  1. Preheat your electric griddle to 350°F (175°C).
  2. Whisk together Greek yogurt, milk, eggs, vanilla extract, and lemon zest until smooth.
  3. Combine all-purpose flour, sugar, baking powder, baking soda, and salt in another bowl; whisk well.
  4. Mix wet mixture into dry ingredients; fold together until just combined.

  6. Cook about ¼ cup of batter per pancake, 2-4 minutes on the first side, until bubbles form; flip and cook another 1-2 minutes.
