Creamy Garlic Chicken Alfredo with Broccoli

A comforting one-pot pasta dish featuring fettuccine, juicy chicken, broccoli, and a rich Alfredo sauce.

Ingredients

  • 12 oz fettuccine pasta
  • 2 cups broccoli florets
  • 1 lb chicken breast, diced
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine pasta according to package directions until al dente, adding broccoli in the last 4 minutes.
  2. Heat olive oil in a large skillet over medium-high heat and season chicken with salt and pepper. Cook until golden brown, about 5-7 minutes.
  3. Remove the chicken and, in the same skillet, add butter. Melt it and then sauté garlic for 30-60 seconds until fragrant.
  4. Pour in heavy cream, bring to a simmer, and add Parmesan cheese, stirring until creamy.
  5. Add the chicken, drained pasta, and broccoli to the sauce, tossing gently to combine.
  6. Garnish with parsley and additional Parmesan cheese before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a splash of milk or cream to restore consistency.
