A delightful twist on traditional Mexican street corn, served in a cup with a creamy sauce, cotija cheese, and zesty lime.

  • 4 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Sauté the corn in a large skillet over medium-high heat until slightly charred.
  2. Mix the mayonnaise, sour cream, cotija cheese, chili powder, lime juice, and a pinch of salt in a bowl.
  3. Combine the cooked corn with the creamy sauce until well coated.
  4. Serve in cups, garnished with fresh cilantro and lime wedges.

Notes

For best flavor, serve immediately after preparation. Can add diced jalapeños for heat or fresh avocado for creaminess.
