A delightful tropical dessert with a buttery graham cracker crust, luscious coconut cream filling, and a vibrant layer of pineapple.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 cups coconut cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups crushed pineapple, drained
  • 1/4 cup shredded coconut (optional for garnish)
  • Whipped cream (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl.
  3. Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
  4. Bake the crust for about 10 minutes or until lightly golden. Allow it to cool completely.
  5. Mix together coconut cream, powdered sugar, and vanilla extract until smooth.
  6. Pour the coconut cream filling over the cooled crust, spreading it evenly.
  7. Refrigerate for at least 2 hours to allow the filling to firm up.
  8. Spread the crushed pineapple over the firm coconut filling.
  9. Sprinkle with shredded coconut for garnish if desired.
  10. Slice into bars and serve chilled, optionally topped with whipped cream.

Notes

For a healthier version, consider reducing the amount of sugar. These bars can also be frozen for longer storage.
