Delightful cranberry mousse cups blending creamy vanilla and tart cranberry flavors, perfect for fall gatherings.

Ingredients

  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 teaspoons gelatin
  • 1/4 cup cold water

Instructions

  1. Prepare the cranberry mixture by combining fresh cranberries and sugar over medium heat until the cranberries burst and the mixture thickens. Let it cool.
  2. Bloom the gelatin by sprinkling it over cold water in a small bowl and letting it sit for 5 minutes. Heat it gently until dissolved.
  3. Whip the heavy cream in a mixing bowl until soft peaks form. Then, add in the vanilla extract and the cooled cranberry mixture.
  4. Fold the gelatin into the cranberry mousse mixture, ensuring it’s fully incorporated without deflating the whipped cream.
  5. Layer the vanilla mousse base and cranberry mousse in clear mini dessert cups.
  6. Chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld and the mousse to set nicely.

Notes
