Delightful dessert cups featuring light and fluffy cranberry mousse, perfect for gatherings and holidays.

  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons gelatin
  • 3 tablespoons water
  • 1 cup cream cheese
  • 2 tablespoons powdered sugar

Instructions

  1. Combine fresh cranberries and sugar in a saucepan over medium heat. Cook until the cranberries burst and the mixture thickens. Allow to cool completely.
  2. Dissolve gelatin in water and let it sit.
  3. Whip the heavy cream to soft peaks in a separate bowl.
  4. Mix cream cheese and powdered sugar until smooth.
  5. Fold in the cooled cranberry mixture and gelatin into the cream cheese.
  6. Gently fold in the whipped cream until just combined.
  7. Spoon the mixture into clear mini dessert cups and chill in the fridge for at least 240 minutes.
  8. Serve chilled, garnished with additional cranberry sauce or whipped cream.

Notes

For best results, use fresh cranberries; if unavailable, frozen can be used. Ensure gelatin is fully dissolved to avoid lumps. Garnish with a mint sprig for extra flair.
