A refreshing and vibrant Cranberry Apple Coleslaw that combines crisp apples, crunchy cabbage, and tangy cranberries in a creamy dressing—a perfect side dish for fall gatherings.

Ingredients

  • 1/2 head green cabbage (about 4 cups shredded)
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Shred the cabbage using a knife or mandoline slicer and place it in a large mixing bowl.
  2. Core and dice the apples into small pieces and add to the bowl with the cabbage.
  3. Sprinkle the dried cranberries over the cabbage and apples in the bowl.
  4. Whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper in a separate small bowl until smooth.
  5. Pour the dressing over the cabbage, apples, and cranberries, and toss well to coat everything evenly.
  6. If using walnuts, stir them in for added texture.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Store in an airtight container in the refrigerator for 3-5 days. Can be made a day in advance for better flavor.
