Deliciously crispy on the edges and chewy in the center, these cowboy cookies are filled with oats, chocolate chips, coconut, and nuts.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1 cup chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (such as pecans or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for the delightful baking that’s about to happen!
  2. Whisk together the flour, baking soda, and salt until well blended.
  3. Cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  4. Beat in the vanilla extract and egg until fully incorporated.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing well.
  6. Stir in the oats, chocolate chips, shredded coconut, and chopped nuts until evenly distributed.
  7. Drop rounded tablespoons of cookie dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, watching for the edges to turn golden brown.
  9. Cool the cookies on the baking sheets for a few minutes before transferring them to a wire rack.
