A comforting and aromatic garlic soup that embodies warmth and home, perfect for cold evenings.

Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme leaves
  • Chives for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the head of garlic by cutting the top off, drizzling it with olive oil, and wrapping it in foil. Roast for 30-35 minutes until soft.
  2. Heat olive oil over medium heat in a large pot. Add the chopped onion and sauté until it becomes translucent.
  3. Add the diced potatoes and broth; bring the mixture to a boil.
  4. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  5. Squeeze the roasted garlic out of its skins into the soup and blend until smooth.
  6. Stir in heavy cream, thyme, salt, and pepper until well combined.
  7. Serve hot, garnished with freshly chopped chives.

Notes

For a deeper flavor, consider adding a pinch of smoked paprika or including greens like kale or spinach before blending.
