A healthy and delicious frozen treat made with high-protein cottage cheese, customizable with various mix-ins.

Ingredients

  • 2 cups cottage cheese
  • 1/2 cup milk
  • 1/2 cup sweetener (sugar, honey, or a sugar substitute)
  • 1 teaspoon vanilla extract
  • Mix-ins of your choice (fruits, chocolate chips, nuts, etc.)

Instructions

  1. In a blender or food processor, combine the cottage cheese, milk, sweetener, and vanilla extract. Blend until smooth.
  2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  3. If using mix-ins, add them towards the end of churning.
  4. Transfer the ice cream to a container and freeze for at least 120 minutes before serving.
  5. Scoop and enjoy your creamy cottage cheese ice cream!

Notes

Serve in bowls or cones, topped with fresh fruits, nuts, or chocolate syrup. Store in an airtight container in the freezer for up to 2 weeks.
