  • 2 cups cottage cheese
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F and grease a 9×9-inch baking dish.
  2. Whisk together the eggs in a mixing bowl until well combined.
  3. Stir in the cottage cheese until fully incorporated.
  4. Mix in the spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper until evenly distributed.
  5. Fold in the shredded cheese, ensuring it’s well mixed in without overworking the batter.
  6. Pour the mixture into the prepared baking dish and top with extra cheese if desired.
  7. Bake for 40-45 minutes or until set and golden on top. Allow to cool for five minutes before slicing.
