Delightful cookies that combine the rich flavor of traditional cookies with the health benefits of cottage cheese.

  • 1 cup cottage cheese
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese and softened butter until smooth.
  3. Add the sugar and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Make sure the butter is softened but not melted for the best texture. Use full-fat cottage cheese for richer flavor and moisture. For a variation in flavor, try adding nuts or dried fruit along with the chocolate chips. Be careful not to overmix after adding the dry ingredients to maintain a soft and chewy cookie.
