  • 1/2 cup cocoa powder
  • 1/4 cup almond flour (or oat flour for nut-free)
  • 1/2 cup sweetener of choice (honey, maple syrup, or stevia)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Gather and prep ingredients by preheating your oven to 350°F (175°C).
  2. Blend the cottage cheese until smooth in a medium bowl.
  3. Combine dry ingredients (cocoa powder, almond flour, baking powder, and salt) in another bowl.
  4. Mix the wet ingredients (sweetener, eggs, and vanilla) into the blended cottage cheese.
  5. Combine the dry ingredients with the wet, folding gently until just mixed.
  6. Pour the batter into a greased or lined 8×8-inch baking pan.
  7. Bake in the oven for 25-30 minutes until a toothpick comes out mostly clean.
  8. Cool the brownies in the pan for 10-15 minutes before moving to a wire rack.
  9. Slice into squares and serve as desired.

Notes
