A delightful Cottage Cheese Banana Bread that combines sweetness and creaminess, enriched with protein from cottage cheese, ideal for any occasion.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup honey or sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add cottage cheese, eggs, honey (or sugar), and vanilla to the mashed bananas and mix until smooth.
  5. Whisk together flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  6. Fold dry ingredients into the wet mixture until just combined.
  7. Transfer the batter into the prepared loaf pan.
  8. Place in the oven and bake for 55-60 minutes, until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Can be frozen for up to 3 months.
