A delightful homemade version of Subway’s Italian Herb and Cheese Bread, perfect for sandwiches and snacking.

  • 1.5 cups Warm Water (110°F)
  • 1 tablespoon Sugar
  • 2 teaspoons Instant Yeast
  • 4 cups Bread Flour (Plus extra for dusting)
  • 2 tablespoons Olive Oil
  • 1.5 teaspoons Salt
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Dried Oregano
  • 1 cup Shredded Cheese (cheddar, mozzarella, or blend)
  • Cornmeal (For dusting – optional)

Instructions

  1. Activate Your Yeast: In a large mixing bowl, gently stir together the warm water, sugar, and instant yeast. Allow it to sit for about 5-10 minutes, until it becomes foamy.
  2. Combine the Dry Ingredients: In another bowl, whisk together the bread flour, salt, Italian seasoning, and dried oregano.
  3. Mix It Up: Pour the dry ingredients into the yeast mixture and add the olive oil. Using a fork or your hands, mix until the dough just comes together.
  4. Knead the Dough: On a lightly floured surface, knead the dough for about 8-10 minutes until it’s smooth and elastic.
  5. Let It Rise: Place the kneaded dough in a lightly oiled bowl, cover it, and let it rise in a warm place until doubled in size—about 1 hour.
  6. Shape the Loaf: Punch down the risen dough, shape it into a loaf, and place on a baking sheet lined with parchment paper.
  7. Add the Cheese: Sprinkle the shredded cheese on top of the shaped loaf, pushing it in slightly.
  8. Second Rise: Cover the loaf with a towel and let it rise for another 30 minutes.
  9. Bake to Perfection: Preheat your oven to 375°F (190°C) and bake for about 25-30 minutes, or until golden brown.
  10. Cool and Enjoy: Let the bread cool on a wire rack before slicing.
