Delightful cookie cups with rich chocolate flavor filled with a creamy, sweet cookies and cream filling.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed chocolate sandwich cookies
  • 1 cup whipped cream
  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in crushed chocolate sandwich cookies.
  7. Press the dough into the muffin tin cups to form cookie cups.
  8. Bake for 10-12 minutes until the edges are firm but the centers are soft.
  9. Allow to cool completely.
  10. In a bowl, combine whipped cream and cream cheese until smooth.
  11. Fill each cookie cup with the cookies and cream filling.
  12. Optionally, top with additional crushed cookies for garnish.

Notes

Best served fresh or chilled, pair with ice cream or milk for a delightful treat.
