Delightful Coconut Snowball Cupcakes are fluffy treats topped with creamy coconut frosting, perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/2 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • Additional shredded coconut for coating

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. Combine the flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  6. Fold in the shredded coconut.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool.
  9. Beat the cream cheese and powdered sugar until smooth.
  10. Gradually add the heavy cream, whipping until light and fluffy.
  11. Frost the cooled cupcakes generously with frosting.
  12. Roll frosted cupcakes in additional shredded coconut to coat.
  13. Serve and enjoy!

Notes
