Creamy cheesecake wrapped in a layer of sweet coconut and rich white chocolate, these no-bake bites are perfect for celebrations or everyday treats.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut, divided
  • 1 cup white chocolate, melted
  • 1/4 cup graham cracker crumbs (optional)

Instructions

  1. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Add in 1/2 cup of shredded coconut and the graham cracker crumbs if using.
  3. Roll the mixture into small balls and place them on a baking sheet.
  4. Freeze for about 30 minutes or until firm.
  5. Dip the chilled cheesecake balls into melted white chocolate, then roll them in the remaining shredded coconut.
  6. Place them back on the baking sheet and refrigerate until set.
  7. Serve your Coconut Snowball Cheesecake Bites and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. Best enjoyed cold.
