  • 1 cup shredded coconut
  • 1/4 cup graham cracker crumbs
  • 12 oz white chocolate, melted

Instructions

  1. Beat the cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.
  3. Fold in the shredded coconut and graham cracker crumbs.
  4. Roll the mixture into small bite-sized balls and place them on a parchment-lined baking sheet.
  5. Chill the bites in the refrigerator for about 30 minutes until firm.
  6. Dip each bite in melted white chocolate and then roll in additional shredded coconut if desired.
  7. Let the chocolate set before serving.
