Delightful mini cheesecake bites coated in white chocolate and shredded coconut, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup shredded coconut, plus more for coating
  • 1/2 cup graham cracker crumbs
  • 1/2 cup white chocolate chips, melted

Instructions

  1. Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Stir in the shredded coconut and graham cracker crumbs until well combined.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Scoop out small portions and roll them into balls.
  5. Dip each ball in the melted white chocolate, then roll in additional shredded coconut to coat.
  6. Place the coated bites on a baking sheet lined with parchment paper and refrigerate until set.
