Delightful bites of chewy coconut and sweet creaminess, these Coconut Rum Snow Squares are easy to make and perfect for any occasion.

Ingredients

  • 2 cups shredded coconut
  • 1 cup graham cracker crumbs
  • 1/2 cup sweetened condensed milk
  • 1/4 cup rum
  • 1/4 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup chopped nuts (optional)
  • 1 tsp vanilla extract

Instructions

  1. Combine the shredded coconut, graham cracker crumbs, and cocoa powder in a large mixing bowl.
  2. Add in the sweetened condensed milk, rum, and vanilla extract; mix well until combined.
  3. Fold in the chopped nuts, if using.
  4. Press the mixture firmly into a greased square baking dish.
  5. Refrigerate for at least 2 hours until set.
  6. Cut into squares and dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. Freezes well for up to 3 months.
