A delightful and creamy coconut pudding that brings the taste of the tropics to your dessert table.

  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup toasted coconut for topping

Instructions

  1. Combine coconut milk, sugar, cornstarch, and salt in a medium saucepan. Whisk until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the pudding into serving dishes and refrigerate for at least 120 minutes to set.
