  • 1 1/2 cups all-purpose flour
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the mashed bananas, crushed pineapple, melted butter, sugar, and vanilla extract in a large bowl until well combined.
  3. Beat in the eggs until the mixture is fully blended and smooth.
  4. Whisk together the flour, baking soda, and salt in another bowl until fully combined.
  5. Add the dry ingredients to the wet mixture gradually, stirring gently until just combined.
  6. Fold in the shredded coconut, ensuring it’s evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top for an even bake.
