A light and fluffy Coconut Milk Frosting that adds a tropical twist to your cakes and cupcakes, while being dairy-free and vegan.

Ingredients

  • 1 can coconut milk (chilled)
  • 23 tablespoons powdered sugar (to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut extract (optional)

Instructions

  1. Scoop the cream from the chilled can of coconut milk into a mixing bowl, leaving the liquid behind.
  2. Whip the coconut cream using an electric mixer on medium-high speed until fluffy and light.
  3. Gradually add the powdered sugar while continuing to whip to adjust sweetness.
  4. Mix in the vanilla and coconut extracts.
  5. Once fluffy and holds peaks, it’s ready to use as a topping.

Notes

Chill coconut milk overnight for best results and tailor sweetness to your preference.
