  • 1 cup sweetened shredded coconut
  • 1 cup heavy cream
  • 1 cup coconut milk
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. In a saucepan, combine coconut milk, sugar, cornstarch, and salt.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Remove from heat and whisk in egg yolks and vanilla until smooth.
  4. Stir in shredded coconut.
  5. Pour the filling into the pie crust.
  6. Allow to cool, then refrigerate for at least 240 minutes.
  7. Top with whipped cream before serving.
