Delicious Coconut Almond Truffles with a chewy coconut center, creamy almond butter, and a luscious dark chocolate coat.

Ingredients

  • 1 cup shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup almond butter
  • 24 whole almonds
  • 8 ounces dark chocolate (for coating)
  • 1 tablespoon coconut oil (optional, for chocolate)

Instructions

  1. Combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond butter until well combined.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm it up.
  3. Form small portions of the mixture around a whole almond, rolling them into balls.
  4. Freeze the truffles for about 15 minutes to help them hold their shape.
  5. Melt the dark chocolate and coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  6. Coat each truffle in the melted chocolate and place on a parchment-lined tray.
  7. Set the chocolate in the fridge for about 30 minutes before serving.

Notes

Stored in an airtight container, these truffles can keep well in the refrigerator for up to two weeks. They can also be frozen for up to three months.
