Delightful no-bake truffles combining rich coconut and almond flavors, perfect for any occasion.

Ingredients

  • 1 cup shredded coconut
  • 1 cup almond flour
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 24 whole almonds
  • 8 oz dark chocolate (for coating)
  • 1 tablespoon coconut oil (optional, for melting chocolate)

Instructions

  1. Combine shredded coconut, almond flour, sweetened condensed milk, and vanilla extract until well mixed.
  2. Take a small amount of the mixture and flatten it in your palm. Place a whole almond in the center and wrap the mixture around it to form a ball. Repeat until all the mixture is used.
  3. Place the truffles on a baking sheet lined with parchment paper and refrigerate until firm, about 30 minutes.
  4. In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 30-second intervals, stirring in between until completely smooth.
  5. Dip each truffle into the melted chocolate, ensuring it is fully coated, then place back on the parchment paper.
  6. Allow the chocolate to set at room temperature or in the refrigerator before serving.

Notes

Add a pinch of salt to the chocolate when melting for a delicious contrast to the sweetness.
