  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 6 cups vegetable broth (or water)
  • 1 bay leaf (for added flavor)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Prepare Your Ingredients: Begin by rinsing and draining the split peas. Chop the onion, mince the garlic, and dice your carrots and celery.
  2. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions, minced garlic, diced carrots, and celery. Sauté for about 5-7 minutes until the onions become translucent.
  3. Combine the Split Peas: Add the rinsed split peas to the pot, stirring well to coat them in the sautéed vegetables.
  4. Add the Broth and Bay Leaf: Pour in the vegetable broth (or water) and toss in the bay leaf. Bring the mixture to a gentle boil.
  5. Simmer and Stir: Reduce the heat to a low simmer and cover the pot. Let it cook for about 30-40 minutes, stirring occasionally.
  6. Season and Serve: Remove the bay leaf. Season with salt and pepper to taste. Serve hot.
