A vibrant and comforting Middle Eastern dish featuring poached eggs in a spiced tomato sauce, perfect for any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • 46 large eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the chopped onion and bell pepper until soft and translucent, about 5-7 minutes.
  3. Stir in the minced garlic, ground cumin, and paprika. Cook for another minute.
  4. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes.
  5. Create small wells in the sauce and crack the eggs gently into them. Cover and cook until the eggs are set, about 5-8 minutes.
  6. Finish by garnishing with chopped parsley or cilantro before serving.

Notes

Shakshuka can be served with crusty bread, pita chips, or a light salad. Leftovers can be stored in the refrigerator for up to 3 days.
