A comforting and creamy potato salad, perfect for summer picnics and barbecues.

Ingredients

  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the red potatoes in salted water until tender, about 15-20 minutes. Let them cool, then chop into bite-sized pieces.
  2. Prepare the dressing by whisking together the mayonnaise, Dijon mustard, salt, and pepper in a large bowl until smooth and creamy.
  3. Combine the chopped potatoes, red onion, and dill into the bowl. Ensure all ingredients are included.
  4. Mix gently until the potatoes are evenly coated with the dressing, ensuring every piece is enveloped in creamy goodness.
  5. Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.

Notes

For a lighter version, substitute Greek yogurt for half of the mayonnaise. Use other potatoes like Yukon Gold or fingerlings if desired.
