Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, beat the cream cheese with 1/4 cup sugar and 1 tsp vanilla extract until smooth.
  3. In a large bowl, beat together the softened butter, 1 cup of granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, incorporating fully before the next.
  5. Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Using a teaspoon, prepare about 1 tsp of the cheesecake filling and set aside.
  8. Using a cookie scoop, measure out about 2 tablespoons of dough and flatten each slightly.
  9. Place the cheesecake filling in the center of each dough piece and fold the dough around it, forming neat balls.
  10. Place the dough balls on the prepared sheets spaced 2 inches apart and bake for 10 to 12 minutes.
  11. Once baked, cool on the sheets for 5 minutes before transferring to a wire rack.
