A delightful medley of flavors and textures, this Christmas Fruit Cake is a warm and nostalgic dessert perfect for holiday gatherings.

Ingredients

  • 2 cups mixed dried fruit (raisins, currants, chopped apricots, etc.)
  • 1 cup unsweetened applesauce
  • 1 cup orange juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Soak the fruits in orange juice for at least 2 hours, preferably overnight.
  2. Preheat the oven to 325°F (165°C) and grease a cake pan with parchment paper.
  3. Whisk together the flour, baking powder, spices, and salt in a bowl.
  4. Cream the softened butter and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  6. Mix in the flour mixture gradually until just combined.
  7. Fold in the soaked fruit and any remaining liquid, along with optional nuts.
  8. Pour the batter into the prepared cake pan, smoothing the top.
  9. Bake for 60-70 minutes until a toothpick inserted comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Wrap in parchment paper and store for enhanced flavor.

For best flavor, soak the fruits overnight and store the cake in an airtight container.
