A delightful medley of flavors and textures, this Christmas Fruit Cake is a festive tradition that brings warmth and nostalgia to your holiday gatherings.

Ingredients

  • 2 cups mixed dried fruit (raisins, currants, chopped apricots, etc.)
  • 1 cup unsweetened applesauce
  • 1 cup orange juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Soak the mixed dried fruit in orange juice for at least 2 hours, preferably overnight.
  2. Preheat the oven to 325°F (165°C) and grease and line a cake pan with parchment paper.
  3. Whisk together the flour, baking powder, spices, and salt in a bowl.
  4. Cream together the softened butter and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  6. Gradually mix in the flour mixture until just combined.
  7. Fold in the soaked fruit and any remaining liquid, along with nuts if using.
  8. Pour the batter into the prepared cake pan, smoothing the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Wrap in parchment paper and store the cake for enhanced flavor.

Notes

For the best flavor, soak the fruits overnight. You can enhance the flavor with additional spices or by replacing sugar with a natural sweetener.
