A delicious and hearty meal featuring spicy chorizo and tender potatoes, perfect for any meal of the day.

Ingredients

  • 1 lb chorizo sausage
  • 2 large potatoes, diced
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 clove garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the chorizo over medium heat until browned, about 5-7 minutes.
  2. Add the diced potatoes to the skillet and cook until tender and golden, stirring occasionally, about 10-15 minutes.
  3. Include the onion, bell pepper, and garlic to the skillet. Cook for another 5-7 minutes until the vegetables are soft.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh parsley before serving.

Notes

Serve with fried or poached eggs on top, or with warm tortillas or crusty bread.
