A rich and creamy chocolate mousse that’s simple to make and perfect for any occasion.

Ingredients

  • 4 ounces dark chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate and butter in a heatproof bowl over simmering water until smooth, then set aside to cool slightly.
  2. Whisk together the egg yolks and granulated sugar in a separate bowl until pale and creamy.
  3. Combine the cooled chocolate mixture with the egg yolk mixture until fully combined.
  4. Whip the heavy cream with vanilla extract until soft peaks form.
  5. Beat the egg whites with a pinch of salt until stiff peaks form.
  6. Fold the whipped cream into the chocolate mixture, then fold in the beaten egg whites until no streaks remain.
  7. Chill the mousse in serving cups for at least 2 hours before serving.

Notes

Serve with fresh berries, whipped cream, or a sprinkle of cocoa powder. Pairs well with espresso or dessert wine.
