A rich and creamy chocolate mousse cake filling that’s simple to make and perfect for special occasions.

Ingredients

Scale
  • 8 oz bittersweet or semisweet chocolate, chopped
  • 1/4 cup water
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon salt

Instructions

  1. In a small saucepan, combine the chopped chocolate and water over low heat, stirring until melted and smooth. Let it cool slightly.
  2. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. In another bowl, beat the egg whites and salt until soft peaks form.
  4. Gently fold the melted chocolate into the whipped cream.
  5. Now, fold in the beaten egg whites until no white streaks remain.
  6. Use the mousse immediately as filling for layer cakes, cupcakes, or serve in cups after refrigerating until set.

Notes

Make sure all utensils are grease-free for better egg white whipping. For richer flavor, use high-quality dark chocolate. Don’t overmix the mousse.
