Delightful cookies combining rich chocolate flavor with gooey marshmallows, perfect for any occasion.

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the cocoa powder, flour, baking powder, and salt in another bowl. Gradually add this dry mixture to the creamed mixture.
  5. Fold in the mini marshmallows gently.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until set.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature. They will remain soft for about 3-5 days; freeze for longer storage.
