An indulgent chocolate lava cake with a crispy exterior and a gooey molten center that brings joy with every bite.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease four ramekins and place them on a baking tray.
  2. Melt the butter and chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth.
  3. Whisk the eggs, egg yolks, and sugar together until thick and pale.
  4. Combine the melted chocolate mixture with the egg mixture until well mixed.
  5. Incorporate the flour, vanilla extract, and salt gently into the batter.
  6. Portion the batter into the prepared ramekins, filling them about 3/4 full.
  7. Bake for 12-14 minutes until the edges are firm but the center is soft.
  8. Cool for a minute, then invert the ramekins onto plates. Serve warm.

Notes

Best served warm with vanilla ice cream or a dusting of powdered sugar. Can be made in advance by preparing the batter and refrigerating it.
