A decadent chocolate lava cake with a rich, gooey center that’s surprisingly easy to make.

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease four ramekins generously with butter and place them on a baking sheet.
  2. Combine the butter and chocolate chips in a microwave-safe bowl. Microwave in short bursts, stirring until melted.
  3. Whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
  4. Pour the melted chocolate mixture into the egg mixture and stir until fully combined.
  5. Fold in the flour, vanilla extract, and a pinch of salt until just combined.
  6. Divide the batter among the ramekins, filling each about three-quarters full.
  7. Bake for 12-14 minutes until the edges are firm but the center jiggles slightly.
  8. Cool for one minute, then invert onto dessert plates and serve warm.

Notes

Serve with fresh berries, whipped cream, or vanilla ice cream. Can store leftovers in an airtight container for up to 2 days.
