Delightful muffins combining the flakiness of croissants with the richness of chocolate; perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 cup pastry flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together both flours, sugar, baking powder, and salt.
  3. Mix the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients until just combined.
  5. Fold in the chocolate chips gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before serving.

Notes

These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to a month.
